Lime Curd

Lime Curd

This lime curd is easy to make. It’s tangy, sweet, silky (straining egg and other liquid ingredients help!), and simply delicious. You can eat it plain, or spread on toast, or as filling for thumbprint cookies like this one, or cheesecake.


Ingredients:

  • 3 Tsp Butter
  • 2/3 Cup Sugar
  • 2 eggs beaten, run through strainer
  • 5 limes, juice
  • Lime zest from 1 lime (optional)

Directions:

  1. Over double boiler, melt butter and sugar, stir in lime juice and lime zest
  2. Add couple tablespoon of butter lime mixture into the egg mixture to raise the temperature
  3. Slowly add egg mixture into butter lime mixture, stir continuously for about 25 minutes till the mixture thickens and coat the back of the spoon
  4. Store in clean glass container and refrigerate
