自从朋友带着我光顾了一次Hartman’s Butcher Shop,顷刻间感觉找到了新天地。屠夫貌似没有什么亚裔客户,竟然不知道牛筋可以卖,可以吃?他老人家很认真地告诉我,杀一头牛只能有两三根这样的牛筋,如若需要,他存着够数量了让我去取。得嘞,我就耐心等呗。今天去店里,屠夫拿出将近五磅牛筋,已经冻起来了,看来这个月杀了不少牛。洗干净,切成小块,焯水。

准备一个料包,我用了大叶,花椒,黑胡椒粒,八角,姜粉,没找到小茴香,只能用了茴香粉。用咖啡滤袋包起来,妥妥的就是一个干干净净的料包了。

高压锅里装半锅热水,把焯好的牛筋和料包放进去,压90分钟。

时间到了,加少许盐,盛出一大碗汤,放冰箱冷藏,下周的灌汤小笼包就靠它了?

然后开启Saute模式,再烧30分钟,汤浓稠了很多,牛筋也酥了。装罐冷却,是不是特别晶莹剔透。

红油牛筋
牛筋冻切片装盘。起油锅,葱末蒜蓉炒香,加入老干妈油辣椒,一点点酱油,糖,炒至油发红,待凉淋于切片的牛筋上,撒上葱花,上桌。

麻辣牛筋
捞出牛筋趁热切小块,起油锅,把葱末,蒜蓉爆香,加入酱油,糖,麻辣调料,炒匀,将切好的牛筋倒入锅,拌匀起锅,撒上一些葱花。开吃✌?️。
