Corn Chowder

Corn Chowder

Bought some fresh, young corn from farmers market a few days ago. I blanched some of them and cut the kernels down to freeze. Today’s corn chowder was made from those home frozen corn. They are so fresh and sweet. With the help of Vitamix, the soup was thickened just right.

Corn Chowder


Ingredients

  • 6 oz Bacon
  • 2 Potatoes, medium large
  • 1 Onion, medium
  • 2 Cups Corn Kernels
  • 2 Cups Chicken Stock
  • 1/2 Cup Whole milk
  • 1/2 Cup Half and Half
  • Salt and Pepper to taste
  • Paprika powder, parsley flakes
  • 1 tbsp Flour

Instructions

  1. Cut bacon into small pieces, over medium high heat stir fry till crispy. Remove bacon from the pan and leave 2 tablespoon of bacon fat in the pan

  2. Cut potato and onion to small pieces, cook in bacon fat for 5 minutes, till slightly browned

  3. Add chicken stock to the pan and bring to a boil, add corn kernels, bacon, simmer till potato is very tender

  4. Take 1/3 of the soup and use Vitamix or food processor to blend on high speed, add flour

  5. Add the soup paste back to pan and mix well with soup.

  6. Bring milk and half and half to a near boil, pour into soup, mix well.

  7. Add salt and pepper to taste

  8. Sprinkle paprika and parsley for garnish
