Zucchini Fritters

Zucchini Fritters


  • 5 medium sized zucchinis, about 2 lb
  • 1 cup of flour
  • 3 eggs
  • 1/2 cup of diced scallions
  • 1/5 tsp of baking powder
  • salt and pepper to taste

For dipping sauce (optional)

  • 1/4 cup of sour cream
  • 3 squirts of Sriracha sauce
  • a couple dashes of Chipotle powder
  • salt and pepper to taste


  1. Grate zucchini and stir in some salt for them to sweat for about 15 minutes
  2. Squeeze out liquid from zucchini
  3. Mix all ingredients together
  4. Heat oil in no stick pan. Over medium high heat, place batter in the pan and flatten the top. Saute each side for about 5 minutes till golden brown.
  5. Serve hot plain or with dipping sauce
