Almond Flour Shortbread
Almond Flour Shortbread
Ingredients:
- 112 g of Almond Flour (about 1 cup)
- 3 Tsp of butter, room temperature, soft enough to mix with flour, but do not melt butter
- 2 Tsp of confectioner’s sugar
- 1/2 tsp of vanilla extract
Directions:
- Mix flour, butter and sugar
- Make 12 balls (about 14g each). I made a thumbprint cookie so that I can fill in the lime curd I made yesterday
- 350 F, bake for 8 minutes, then fill in the curd, and jam (fig preserve in the picture) of your liking, bake for another 2 minutes
- Let cool completely before handling
