Almond Flour Shortbread


  • 112 g of Almond Flour (about 1 cup)
  • 3 Tsp of butter, room temperature, soft enough to mix with flour, but do not melt butter
  • 2 Tsp of confectioner’s sugar
  • 1/2 tsp of vanilla extract


  1. Mix flour, butter and sugar
  2. Make 12 balls (about 14g each). I made a thumbprint cookie so that I can fill in the lime curd I made yesterday
  3. 350 F, bake for 8 minutes, then fill in the curd, and jam (fig preserve in the picture) of your liking, bake for another 2 minutes
  4. Let cool completely before handling
