Savory Zucchini Bread with Bacon Cheese and Herb

savory zucchini bread with bacon cheese and herbs

I remember eating zucchini bread for the first time twenty some years ago. It had a very interesting texture, dense, yet soft. I have been trying to look for that bread again with no success. Here is my attempt at making one myself. This one is for the savory quick bread lovers, and it’s my original recipe. It is full of aroma from various herbs as well as olive oil. It is also very moist. Bacon bits add a nice layer of taste and texture to the bread. If you are concerned about carb content of the bread, you can try to use almond flour to replace part of the flour, see recipe here.
