Great usage of leftover meatloaf, sausage would work nicely as well.

Cut potatoes in small pieces, diced onion, saute till tender, add cut up meatloaf, milk and left cook for 15 minutes. Season with salt, pepper, paprika, chili power and cayenne pepper to taste. Transfer mixture to dutch over, add eggs, and bake 20 minutes at 350F.
