Mix all ingredients in a stand mixer for about 8 minutes.
Cover and let rest in room temperature for at least 12 hours
Move dough, which is very wet and sticky, to oily silicon mat. Rest again
Heat over to 450F, and place dutch oven in the oven to be heated.
Move dough into dutch oven, cover and bake for 30 minutes. Uncover and bake for 20 more minutes.
Rest on cooling rack.
